Brown Roux Sauce:<br />
Ingredients: <br />
2tbsp Butter <br />
1/2 Large Onion (cut cube)<br />
1/2 Carrot (Cut cube)<br />
1 Small Piece Celery (cut cube)<br />
1 Small Tomato (Cut cube) - 1 omitted<br />
250ml Chicken Stock (I used water mix with Teriyaki Sauce)<br />
A pinch of Salt & Pepper to taste<br />
2 tbsp Plain Flour<br />
<br />
Methods:<br />
1. Heat the butter and fry all the vegetables except tomato.<br />
2. Add the flour, brown well then add in tomato.<br />
3. Add the stock, salt and pepper. Cook till the right thickness.<br />
4. Remove vegetables and serve the sauce with your favourite dishes.<br />

I love chiffon cake! Be it pandan chiffon, coffen chiffon, choc chiffon, earl grey chiffon, marble chiffon, orange chiffon, apple chiffon & etc…… For friends who like chiffon, try it, you will love it!<br />

Ingredients A:<br />
6 nos Egg yolks<br />
50g Sugar<br />
1/4 tsp Salt<br />
40g Corn oil<br />
70g Coconut Milk<br />

Ingredients B:<br />
125g Cake flour<br />
1/2 tsp Baking powder<br />
<br />
Ingredients C:<br />
6 nos Egg whites<br />
50g Sugar<br />
1/4 tsp Cream of tartar<br />
<br />
Method:<br />
1. Stir in all ingredients A with a hand whisk and set aside.<br />
2. Sieve ingredients B and set aside.<br />
3. Whisk ingredients C till stiff with the mixer and set aside.<br />
4. Combine the flour and yolk mixture and mix till smooth.<br />
5. Immediately fold in the egg whites into flour mixture and mix well.<br />
6. Ingredients: <br />
(A) 240g Water/Milk<br />
(B) 290g Bread Flour, 70g Whole Meal Flour, 50g Plain Flour<br />
(C) 2tbsp Milk Powder, 40g Sugar, 1/2tsp Salt, 1&2/3tsp Yeast<br />
(D) 65g Butter<br />

Method:<br />
1. Add water/milk into the bread machine tin.<br />
2. Add in all flour as stated in (B)<br />
3. Add in ingredients (C), try to put each of them in one of the corner edge of the baking tin.<br />
4. Select programme; 750g Bread, Light Crust and press start<br />
5. When the dough start to form, add in butter. Let it run accordingly as per selected programme and add in (E) when acoustic signal is heard..<br />

Note: For my Severin Bread Maker, I removed it 20mins early for a 3hours Standard Programme.<br />

Recipe:<br />
(A) 4 eggs white, 40g Sugar<br />
(B) 230g Butter, 50g Sugar, 1/4tsp Salt<br />
(C) 4 egg yolks, 1st Vanilla Essence<br />
(D) 60g Milk<br />
(E) 200g Self Raising Flour<br />
(F) 25g 73.5% Dark Converture Chocolate, 25g Whip Cream<br />
<br />
Method:<br />
Beat (A) till soft peak and set aside.<br />
Cream (B) till getting fairer and slowly add in (C), mix till well combine.<br />
Add (E) & (D) together but slowly add in, about 3 times. Just mix well will do.<br />
Take 1/3of the batter, mix with (F) to get chocolate batter.<br />
Pour both chocolate & vanilla batter in baking tin and create marble effect.<br />
Bake at 170C for 45-50mins.<br />
<br />
Remark: I twist the recipe to get Marble Cake from basic Vanilla Butter Cake and reduce some sugar as well.<br />

芡汁:粟米粉半汤匙加1汤匙水<br />

做法:热3汤匙油,炒香大葱,加入鸡肉或猪肉炒一会,再加入调味料炒至稍干。加入青豆及打芡,取出待冷。<br />

皮用料A:200g面粉、60g牛油、2汤匙糖、100ml清水 - 揉成面团<br />

皮用料B:160g面粉、100g白油 - 揉成团<br />
<br />
做法:将A和B面团各分成20份,搓圆。用A包入B,擀成长形,卷起,重复这步骤一次,然后搓圆休息10分钟。再将面团擀成圆薄片,包入馅料以螺旋形折起,排放在烤盘上,涂上蛋液,放入预热烤箱以200度烤15分钟。取出再涂上蛋液,洒上少许芝麻,继续烤15分钟至金黄色即可<br />

Cream Cheese Mixture: 250g Cream Cheese, 50g Sugar, 1 Egg<br />
Chocolate Mixture: 180g Butter, 100g Sugar, 3 Eggs, 3tbsp Cocoa Powder, 120g Self Raising Flour, 1tsp Baking Powder<br />

Method:-<br />
1. Beat butter with sugar till pale. Add in one egg at one time. Lastly add all flour till well combine.<br />
2. Beat cream cheese with sugar, add in egg till well combine. <br />
3. First, scoop the chocolate mixture into the souffle cup, follow with cream cheese mixture and last some chocolate mixture again.<br />

我只是把全麦粉和高粉分量对换,只因这麦香面包毕竟是我的处女作,还是小心为妙。<br />
出炉后,成果好棒。好香,而却好有口感。<br />
<br />
液种:300g 高粉,1/2tsp 即用酵母粉,300g 水<br />
混合均匀后,室温发酵一小时,放入冰箱冷藏至少16小时备用。<br />
<br />
材料:300g 冷藏液种, 220g 全麦面粉(我放130g 全麦面粉), 130g 高粉 (我放220g 高粉) , <br />
100g 细砂糖, 5g 海盐, 2tsp 即用酵母粉, 1tbsp 蜂蜜, 1颗 全蛋, 85g 牛奶,50g 牛油。<br />

Chocolate Banana Cake Recipe</h3>

<strong>Chocolate Sponge Cake (recipe adopted from <a href="http://happinesstory.blogspot.sg/2013/04/blog-post.html">Bernice's Kitchen</a>)</strong></h4>

(A) 75g Warm Water, 45g Cocoa Powder<br />
(B) 6 Egg Yolk, 45g Yellow Sugar, 75g Corn Oil, 75g Milk, 2/3 tsp Salt<br />
(C) 150g Cake Flour, 2/3 tsp Corn Flour, 2/3 tsp Bakng Powder (Shift x 2 times)</div>

(D) 6 Egg White, 90g Yellow Sugar, 1/3 tsp Baking Tartar</div>

Method: </div>
<div align="justify">
1. Mix (A) till dissolved.</div>

2. Mix (B) till well combine and add in 1.</div>
<div align="justify">
3. Whisk egg white, slowly add in yellow sugar and baking tartar. Each time add in 1/3 of the yellow sugar. Whisk till soft peak.</div>
<div align="justify">
4.Add (C) into 2, the egg yolk mixture. Stir till well combine.</div>
<div align="justify">
5. Fold in 1/3 of egg white mixture into the flour mixture, subsequently fold in the flour mixture into the remaining 2/3 egg white mixture. Fold in lightly.</div>
<div align="justify">
6. Pour the batter mixture into baking tray (7'x7'), slightly tab on table to remove the bubble.</div>
<div align="justify">
7. Bake at pre-heat oven, 170C for 45-50mins.</div>

8. When it is well bake, remove from oven, turn the cake up side down and let it totally cool.</div>

9. Unmould the cake and slice it into 3 slice and set aside.</div>

Cake Setting</h4>
<div style="text-align: justify;">
1. Lay the 1st layer sponge cake in the cake tin, spread over 1/2 of the chocolate mousse and lay the sliced banana on top of the mousse.<br />
2. Top up the 2nd layer sponge cake, spread aver the balance 1/2 of the chocolate mousse and continue to lay the sliced banana on top of the mousse.<br />
3. Top up the 3rd layer spnge cake, keep in the refrigerator till the mousse sets.<br />
4. Pour the ganache onto the cake and put in the refrigerator again to let the ganache coating sets.<br />
5. Unmould the cake, slice with a warm knife and serve.<br />

翻糖食谱参考<a href="http://fishlee-story.blogspot.sg/2011/10/fondant-icing-recipe.html">鱼鱼家</a>。 我用的分量如下:-<br />

材料:<br />
25g 无味鱼胶粉 (Geletin)<br />
1/4 cup 开水 (Room Temperature Water)<br />
1/2 cup 葡萄糖浆 (Glucose)<br />
1 tbsp 甘油 (Glycerine)<br />
2 tbsp 白油 (Shortening/Crisco)<br />
2kg 糖粉(Icing Sugar, sifted) *我只用1kg多。糖粉多与少,以粉团柔软度为准。<br />
<br />
做法:<br />
1。把鱼胶粉放入一个干净的小碗,加入开水。放置一旁在待鱼胶粉被开水渗透,再隔水煮溶至完全熔化。<br />
2。加入葡萄糖浆,调均;再加入甘油,再调均。<br />
3。等冷却后再加入糖分里。<br />
4。搓揉糖浆和糖粉,确保完全融合在一起。<br />
5。加入白油,搓揉均匀,直到它变成一团糖粉团。<br />
6。分割成小团,再调色。上色时要慢慢加至所要的颜色。<br />
7。用保鲜膜包好,收进密封的盒子里保存。<br />
8。再取所要的分量,开始翻玩。<br />

Ingredients:<br />
4g or 1&1/2 tsp Agar-agar Powder<br />
750g Water<br />
75g Sugar<br />
200g Fresh Milk<br />
2tbsp Milk Powder melted in 100g Hot Water<br />

Steps:<br />
Mix agar-agar powder, sugar and water, cook till boil.<br />
Add in fresh milk, continue to stir till boil.<br />
Last add milo, stir and let it boil.<br />
Transfer to pudding cup and let it set.<br />

情浓巧克力表层:120g 70%黑巧克力,</div>

100g 动物性奶油,30g 牛油</div>

做法:</div>

1。把消化饼干碎末倒进黄油里,拌均。</div>

倒进8寸的蛋糕模,均匀铺在蛋糕模底部,用小勺压平压紧。铺好饼干底后,以120度烘烤10分钟,待冷后把蛋糕模放进冰箱冷藏备用。</div>

2。搅拌乳酪,糖,再加入鸡蛋。拌均后再加入动物性奶油,再搅拌均匀后倒入蛋糕模。</div>

3。把蛋糕模放在较大烤盘里(如果是活底模记得包上锡纸,以防进水),并在烤盘里注入1/3清水。</div>

放入预热烤箱,160度,烤60分钟。</div>

(时间,温度共参考,看个人烤箱而定)</div>

烤好的乳酪蛋糕取出以后,先不脱模,连同蛋糕模一起冷却到室温。</div>

4。在等待乳酪蛋糕冷却的时候,将巧克力和牛油切小块,放入大碗里,加入动物性奶油。再将巧克力大腕放入另一个盛着热水的大大腕,隔着烧水不断搅拌至完全融化。</div>

5。趁巧克力混合液温热,把它倒入乳酪蛋糕上。待巧克力混合液变得平整后,将蛋糕模放入冰箱,冷藏4个小时以上。脱模候,用小刀沿着蛋糕模壁划一圈,就可以脱模了。</div>

6。切芝士蛋糕的时候,先把刀用热水浸泡一下再切,就可以切得漂亮,平整了。每切一刀,都要把刀擦拭干净并重新预热一下,再切下一刀。再享受这情浓巧克力乳酪蛋糕诱惑吧!<br />

Method:</div>
<div class="separator" style="clear: both; text-align: center;">
Whisk (A) egg white, slowly add in sugar and vineger slowly, and whisk until soft peak. Set aside</div>
<div class="separator" style="clear: both; text-align: center;">
Mix (B) egg yolk with sugar, corn oil and fresh milk.</div>
<div class="separator" style="clear: both; text-align: center;">
Slowly add in (C) to egg yolk mixture con-currently add in the egg white mixture. Stir in till well combine will do.</div>
<div class="separator" style="clear: both; text-align: center;">
Scoop into the baking cup till 80% full. </div>
<div class="separator" style="clear: both; text-align: center;">
Bake at preheat oven, 170C for 18-20mins or till well golden brown.</div>

Let it cool. Whip the whipping cream and docor accordingly.</div>
